Restaurant dream comes true in a school bus

SHERMAN, Texas -- A new local restaurant is all about serving. And they do that serving in a spiced-up school bus, where customers can come in and sit down.

Ruby's Cuisine traces its origins to a family dinner conversation.

"That was 11 years ago, and it's been on my mind ever since," said owner Maycol Castaneda. "I've done research throughout the 11 years. I noticed it's not cheap. It's not easy. It's not just one of those things where you buy a table and you start a business."

The unique restaurant concept featuring Colombian specialties has been Castaneda's dream for some time. It lets him not only provide for his family, but serve the county that he says has so kindly welcomed him.

"Our thing is: What can we serve you with? We like to serve people. The people of Grayson County have kind of been great to us, so I think that's a way of giving back to the people who are helping our business or our dream come true," he said.

Castaneda's dream doesn't stop with the bus. He's is setting up "city days," where those who work in the city -- like police officers, firefighters and 911 dispatchers -- can be the ones served.

"There's people everywhere that work for the City of Sherman, and our thought would be to do something for them so we can serve them and show our appreciation for them," he said. "Our way of saying 'thank you' for serving us, too. Let me serve you back for everything you do in the city."

Ruby's Cuisine, at 1523 Texoma Parkway, combines Maycol Castaneda's love for his family and the city.

"I'm glad to have my family. I'm glad to be in Grayson County. I'm glad to be a part of this community," he said.
