Crafty Creations In The Kitchen - Brenda's Italian Pasta Salad & Other Yummy Goodies

Brenda is getting creative in the kitchen this week on Good Morning Texoma! She's come up with a yummy pasta salad, perfect for your Fourth of July picnic.

Italian Pasta Salad
You'll need:
Favorite Tony Bennett CD
1 Large Bag of Pasta
Green & Red Bell Pepper
Red Onion
Mushrooms
Black and/or Green Olives
Artichoke Hearts
Grape Tomatoes
Shredded Mozzarella Cheese
Parmesan Cheese
Oregano
Italian Dressing

Directions:
Play CD.  Cook Pasta per package directions. Clean, chop and coat veggies with dressing. Cool pasta in ice water and let sit 10 minutes - drain.
Combine veggies and pasta, add dressing if needed. Top with oregano and cheeses, serve chilled.

Cold Corn Salad
You'll Need:
1 large back of frozen corn
1 green and 1 red bell pepper
1 bunch of green onions
1 large Jersey tomato
1 firm avocado
creamy italian dressing

Directions:
Chop peppers and onions, add to cold corn. Coat with dressing. Garnish top of salad with wedges of tomato and avocado and bell pepper top.
** use any tomato if Jersey tomato isn't available. A metal bowl will keep this cold for transport. It will also keep frozen corn frozen so defrost first.

Italian Appetizer
You'll need:
Fresh tomato or can or diced italian style tomato
Red onion
cucumber
celery
italian dressing
Parmesan cheese

Directions: Dice veggies and combine, coat with dressing. Serve chilled in juice glass with celery stick garnish.
Top with Parm Cheese.
***if using canned diced italian style tomato dressing is not needed.
