Fulbelli's Joins Red River Marti Gras & Jazz Festival With Muffuletta Sandwich


It's carnival time in New Orleans! But if you can't make it to the Big Easy for Mardi Gras, you can get all the fun and food and jazz right here in Texoma with the Red River Mardi Gras and Jazz Festival this weekend February 22, 2014.

To get it going in style, T.J. Larossa with Fulbelli's in Sherman joined Lisanne on Good Morning Texoma to make a real N'awlin's Muffuletta Sandwich.

For the Sandwhich you'll need:

Real Italian Rolls, Salami, Mortadella, Provolone Cheese (You can also add thin sliced ham/mozzarella cheese)

What makes this sandwich great is the spread! You'll need:

1 cup Kalamata Olives

1 cup Green Olives With Pimento

1 cup Pepperocini

1/2 cup Capers (strained)

2 pieces Anchovy (patted dry)

1 tbsp Garlic

1 tsp Dijon Mustard

1 tsp Thyme

3 tbsp Parsley

1/4 tsp crushed Pepper

1 tbsp lemon juice

1 tsp Red Wine Vinegar

1/2 cup Olive Oil

2 dashes Tabasco

Combine all ingredients into Robocoupe (or blender/food processor). Mixture should be some what chunky, not smooth. Spread onto sandwich and enjoy!

Shelf life : 2 weeks

Yield: 2 cups


Red River Mardi Gras and Jazz Festival

Friday, February 21 is the KickOff Masquerade Ball at Kelly Square. Wonderful hors d'oeuvres from Little Italy Ristorante and Fulbelli's Restaurant. Dancing to the smooth tunes of The Toney Walsh Jazz Combo. (Most people know Toney from the popular band, Class Act.) Several Texas Hold'em Poker Tournaments. And–an event no Mardi Gras Grande Ball would be without–the crowning of the Mardi Gras King and Queen, Bill & Cheryl Plauché!Saturday, February 22 is our biggest day filled with music, food, and great performances. Bill Collins from the Sherman Jazz Museum has found some seriously great jazz performers, and he'll be ready to welcome you from 3-6 pm to the museum to hear Rod and the Reporters Dixieland Band featuring Rod Booth, former member of UNT's 1:00 Lab Band. Another former member of UNT's 1:00 Lab Band is Justin Pierce who will be performing with Justin Pierce Jazz Band from 8-11. And between the two? We have…Street Performers…Gumbo CookOff…Crawfish Boil…Dancers… and music!
