Getting Fit: Watermelon Treats to Cool Your Summer Cravings


Every Monday morning on Good Morning Texoma, KTEN's Health and Fitness contributor Theresa Hall from Sherman Nautilus gets us moving with some great work out ideas and tasty nutritious treats.

This week, it's that summertime favorite ... watermelon!

Watermelon Greek Salad

The flavors in this salad are light and tasty. Sweet, salty, sour a bit of mint, the variety is refreshing.  

4 cups cold seedless watermelon, cut into bite-sized pieces
1/2 cup feta
1/2 cup Kalamata olives
2 tbsp salted pumpkin seeds
1 1/2 tsp fresh mint, finely chopped
Freshly ground black pepper to taste

2 tbsp balsamic vinegar
2 tbsp orange juice
Combine the vinegar and orange juice. Sprinkle evenly over the salads and serve.


Watermelon and Berry Spinach Salad

Watermelon and berries mix wonderfully with fresh crunchy spinach. The mint lends a nice finish to the mix of flavors.

4 cups fresh spinach, leaves torn into bite sized pieces
1 cup fresh mint leaves, rough chopped plus extra for garnish
2 cups watermelon, deseeded and cut into 3/4" chunks
1 cup blueberries
1/2 cup strawberries, sliced

3 tablespoon olive oil
2 tablespoons fresh squeezed lime juice
small pinch salt
fresh ground white pepper to taste
Whisk the lime juice into the olive oil until emulsified. Add the salt and pepper and whisk just a bit more. Drizzle over salad


Watermelon Smoothie


3 cups watermelon chunks
1 small banana, chopped
1 cup ice
1 1/2 cups 0% fat Greek-style vanilla yogurt

Simply place watermelon chunks, chopped banana, ice and yogurt in a blender. Blend until smooth.
